Cashew Burfi

This is a very easy recipe from my mom that lets you make yummy cashew burfi in only a few minutes.

Ingredients
  • 1 cup Cashew Powder (Powder the raw Cashew nuts in a mixer)
  • 1/3 cup Ghee
  • 1/3 cup Milk Powder
  • 1 cup Sugar (Adjust to Taste)

Method
  1. Grease a flat dish or tray with a little ghee on the sides and the bottom.
  2. Take a heavy bottomed pan and add the sugar. Add just enough water to cover the sugar and place it on medium heat. Stir occasionally to check if the sugar syrup has reached a string like consistency. (If you stir the mixture with a spoon and lift it up, the drops of the syrup will fall down like a string.)
  3. Now add the remaining ingredients and mix well so that there are no lumps. Stir for 2-3 minutes till the lumps are completely removed and the mixture thickens slightly.
  4. Pour the mixture into the greased tray and allow it to cool. The mixture will still be a little loose and not too thick when poured into the tray but no worries, it will harden as it cools.
  5. Once cooled, slice the cashew burfi and store in an air tight container.
